Rubber Chicken Challenge-Meal #4 and #5

I fell a little behind on my Rubber Chicken Challenge, but here's my chance to get caught up!!
I have two great meals for ya!  One from me and one...surprisingly, from my husband!  (Yep, hubby can cook)

On to the meals!  
Meal #1Chicken Tettrazzini-this one was pretty good, but I'm adding some changes here!
What you need:
1 pack of your pre-cooked chicken
2 cups pasta (any kind will do)
1 stick of butter (next time, I'll be using vegi oil instead...a little healthier)
2/3 cup of flour
half of a small onion, chopped (I used a whole and it was a bit too strong for me)
2 cloves garlic, crushed and chopped
2 cups chicken stock (the original recipe called for 4 cups...WAY TO MUCH!)
1/2 cup cream (the original recipe called for 2 cups...again WAY TO MUCH!)
1 cup Parmesan cheese
salt/pepper to taste

Preheat oven to 400 degrees.  I sauteed the onion and garlic in a little of the butter over med heat and put the pot for pasta to boil.  In a saucepan, I melted the remaining butter and then added the flour to make a paste.  Once combined, add the chicken stock to reduce and thicken.  Add your chicken to the suateed vegi's and heat thru.  Once your stock sauce is thickened, add the cream and reduce a little more.  Once pasta is tender, throw everything into a baking dish, top with the Parmesan cheese, and bake for 20 minutes.

Now...the changes I'll be making for next time (aside from the noted ones above) is to forget the baking dish and just throw everything together in a pasta bowl and serve much like spaghetti.  Whats wrong with that?  Also, I think I would throw in a few greens such as spinach, broccoli or asparagus.  Also, I love Mozzarella...I'll definitely be including that in my sauce next time!  Yum!

Meal #5 Chipotle Style Chicken Burritos-My husband came up with this one and man...it was GOOD!
What you need:
1 package of your pre-cooked chicken
some corn tortillas (that's what I ate...hubby made some yummy chipotle style nachos)
2 servings worth of instant white rice
1/2 small onion, chopped
bell pepper, chopped
1 can of black beans
cayenne pepper to taste
salt/pepper to taste
1 beer (any brand...he happened to have Bud Select)

Prepare your instant rice according to the box directions but include chicken stock rather than water.  Then, set aside.  Saute your onion and pepper in a little butter; add your seasonings, and then add chicken.  Warm thru and then add the beans, drained.  Once everything is well combined, add your beer (just a few times around the pan...you can drink the rest ;) and let simmer.   Then throw in the rice, stir well and yummo!  Eat with tortillas or make some yummy nachos with homemade salsa!

This nearly completes the Rubber Chicken Challenge...we have a few more yummy meals coming your way!  I promise to take pics next time!!!
