Recipe of the Week

A super easy and cheap muffin recipe good for breakfast or even snack time! One of my favs with my 2 year old and healthy too...but don't tell him that.

Oatmeal Carrot Muffins

1 package Jiffy oatmeal muffin mix
2 cups shredded carrots
½ cup raisins
1 tsp grated nutmeg
3 tbsp brown sugar

Preheat to 400 degrees. In large bowl, prepare muffin mix per box directions. Stir in nutmeg, carrots and raisins. Top uncooked muffins with brown sugar. Bake 15-20 minutes. Happy Baking and enjoy!
